Oatmeal cookies bring memories of home

Mix by hand.

3 cups old fashioned oats, not quick or steel oats,

1 cup flour,

3/4 tsp. salt

1/2 tsp. baking soda

4 T. butter melted and slightly browned watch carefully. This add a caramel flavor to the cookie.

1/4 cup oil

1/4 tsp. cinnamon

3/4 cup dark brown sugar

1/2 cup white sugar

1 egg

1 yolk

1 tsp. vanilla

This makes a stiff dough.

Mix all of the above.

1/2 cup raisins and 1 cup chopped nuts are optional.

Line two baking sheets with parchment.

Mound 3 T. per cookie. Flatten cookies with wet palm to 2 1/2 inches in diame-ter, 12 cookies for each tray.
