Easy Fish Dinner

This quick dinner can be prepared in 20 minutes to serve four. 

4 four-six ounce cod fillets, 1/2 thick, fresh or defrosted*

Buttered flavored or traditional vegetable spray

2 tsp. dried thyme

2 tsp. paprika

Aluminum foil

1 tsp. low sodium vegetable broth crystals or 1/4 tsp. salt

1/4 tsp. fresh black pepper

This recipe can be prepared with any white fish, sea bass, orange rugby, or tilapia. Spray a piece of foil or parchment paper with vegetable spray on a baking sheet with sides. Place the fillets on the tray and spray with a coating of vegetable spray and then sprinkle thyme and paprika to cover the fillet. Bake at 400F, until fish is opaque and flakes easily. Serve on a bed of steamed rice, prepared quinoa, mashed potatoes or steamed broccoli. 

* Frozen fillets in sealed plastic wrappers can be defrosted in cold water for 15 minutes.
