Portuguese Meatballs

Serves 4.

These meatballs will freeze well for a quick dinner.

2 large eggs

1 lb. lean ground beef or chicken

1/4 cup panko or matzo meal

1 tsp. lemon zest or 1 tsp. fresh lemon juice

1/2 tsp. black pepper

1 tsp. ground nutmeg

1 T. minced garlic, divided

1 tsp. Kosher salt

2 T. olive oil or avocado oil

1 cup finely chopped yellow onion, fried in 1 T. oil until translucent.

1 T. tomato paste

1 tsp. sweet paprika

3/4 cup dry white wine

1 lb. plum tomatoes, finely chopped or 16 oz. canned tomatoes

Dubai Simple Brownies

Makes 9.

Prepare an 8x8-inch pan with buttered parchment that overlaps the sides. Preheat oven to 350 F.

1/2 cup butter, melted, 1 stick, 45 seconds in microwave

1 cup sugar

2 eggs, lightly beaten

1 tsp. vanilla

1/2 cup flour

1/3 cup unsweetened cocoa powder

1/4 tsp. salt

1 tsp. baking powder

In a medium bowl place melted butter, sugar, vanilla, and slightly beaten eggs.

Stir in dry ingredients, flour, cocoa, salt, and baking powder. Pour into pan and smooth to corners. Bake 20-25 minutes until brownies spring bake to the touch. Allow to cool and

frost with melted chocolate.

6 oz. dark chocolate, chopped and melted 1 minute in microwave and stirred smooth.

1/4 cup chopped pistachios or other nuts.
