Kidney Bean, Potato, Onion Stew

Chayote squash, originally from Mexico, is about the size of an apple. It is a light green and has a mild flavor with usually one small seed. It is good chopped and steamed with your favorite seasonings as a side dish. It is often used in stews and soups. This vegetarian stew has lots of fiber.
1 lb. kidney beans soaked overnight or 3 15- oz. cans, drained
